The world today is a huge gastronomic palate bubbling with the wonders and magic of different cuisines from so many different regions around the planet. There are more foodies than ever before thanks to the multimillion booming cuisine industry which is on an overdrive of profit. Chefs all over the world are inventing new dishes and remaking older dishes into new ones infusing global flavors and making them even more palatable than ever before. However, the success of an eatery is not only due to the edibles but also due to many other factors. These factors include ambience, hospitality, prices, and value for money, crowds, location, convenience, etc. Anyone who has ever been into Indian restaurants be it anywhere in the world will vouch for the fact that when it comes to hospitality, the country is among the best.
We believe in 'Atithi devo bhav' which translates to 'Guests are akin to God' in English. Most of the Indian restaurants have a fine hospitality system in place. They welcome the guests in a traditional way with tikka and aarti and escort them till their seats.
The waiters and staff are trained to be courteous with the guests and always greet them with a smile. This happens especially in thali joints. Thali is a traditional food system of India which has been going on since the ancient times. A thali is basically a mix of a variety of dishes right from the welcome drinks to the mukhwas. It is a huge plate with various vatis or bowls and 2 glasses for chhaas and a drink as well as a glass of water of course. traditional food such as dal bhatti churma, bhindi sabzi, paneer makhani, chhole, puris, steamed rice, masala rice, rotis, salad, dahi, etc are served by waiters. For a fixed price you can have an unlimited amount of stuff which is actually a very good deal. You have different kinds of starters and desserts as the menu rotates every week.
Dhoklas, khandvi, pattice, puffs, aamras, shrikhand, maalpua, mithai, etc are examples of the many mouth watering starters and sweet dishes which one gets in a thali. This lip smacking blend of traditional food is also found in many outlets abroad and the foreigners are stumped by the kind of sheer variety of cuisines that a single country can boast of.
Not even the royal family of England or the western Hollywood celebrities have been spared of the alluring charm of Indian restaurants as you read in papers about them splurging on such places almost every other day. The beauty of these places is more often than not, the dishes, other than the great hospitality of course. The cuisine is a mix of many exotic spices and ingredients, most of which are native only to the huge country and hence they have become a hit in foreign lands. After reading this article, it is needless to say that one will be tempted to try out a thali and feel the magic.
